The Basic Vanilla Sponge Cake Recipe – Eggless

To master the art of baking the perfect sponge cake, you need to fail several times. Speaking from experience. I have tried all sorts of eggless and regular varieties of basic vanilla sponge cake and chocolate sponge cake and have failed several times. But I refuse to give up. If I have to buy readymade cake mixes and then bake a cake in the oven, I might as well buy a well prepared sponge cake from the store. So the stubborn me, keeps experimenting and my guinea pig husband dreads the fragrance of those cakes. But only until today.

Finally, I feel I have come extremely close to that perfect eggless vanilla sponge cake and hence I am eager to share this recipe with all of you. This recipe is pretty simple and if you follow it to the T you may end up with a perfect cake in the first go itself. I have baked this one in a loaf pan or mould  as the cake was going to be the part of a delicious pudding (recipe after this).

So let’s get to baking

Ingredients:

  • 1 1/4 cup flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup milk
  • 1/2 cup condensed milk
  • 1/3 cup butter
  • 2 tsp icing sugar/powdered sugar
  • 1 tsp vanilla essence

Recipe:

  • Sift the flour, baking powder and baking soda and keep aside.
  • Preheat oven at 200 degrees C for 15 minutes.
  • Take butter (room temperature) and add condensed milk to it. Whisk it or beat it with an electric handheld beater.
  • Now add milk, sugar and vanilla and beat well again.
  • To this add the flour mix part by part and beat to form a smooth batter.
  • The resulting batter will be thick and not of pouring consistency.
  • Grease the cake tin with butter and evenly spread the batter in it.
  • Now bake the cake at 180 degrees C for 30-35 minutes.
  • Check it after 25 minutes by inserting a toothpick in the centre of the cake, if it comes out clean, your cake is baked.
  • Cool it on a grilled rack and use it to make desserts or as a tea-time cake.

My inputs:

  • If you wish to make an orange cake, replace milk by orange juice and add some orange rind.
  • You can also replace the condensed milk with yogurt but in that case, add up to 4 tbsp sugar. Also the resulting cake may not be as perfect. 
  • You can use this as a base for gateaux, tiramisu, puddings or even to make mixed fruit or pineapple cakes.

    You could also try using real vanilla from a pod. You get these for Rs. 45 a pod from supermarkets nowadays . Or from Online grocery stores like Zansaar.com. Unmatched, rich, real flavour!
