Pasta Salad

When I am not in the mood of making something elaborate for dinner and when Maggi is not the option, I prefer making this quick pasta salad. Its easy, tasty and quick besides being a filling meal. So without much ado, here’s the recipe.

Ingredients (Serves 2):

  • 2 bowls pasta
  • 1 carrot – cut in small dices
  • 1 capsicum – small dices
  • 1 onion – (optional) small dices
  • 1 cucumber – deseeded and diced
  • 2 tbsp olive oil
  • 3 tbsp ketchup
  • 1 tbsp chilli sauce or few drops of tobasco (if you like it a bit spicy)
  • Salt and pepper to taste


  • Boil pasta as per instructions on the packet. You can use any type of pasta, I prefer penne. Don’t forget to add salt to the water while boiling pasta.
  • Parboil the carrots. All the other veggies can be used raw.
  • Mix the olive oil, ketchup and sauce in a salad bowl.
  • Add the veggies and pasta and give it a good mix. Season with salt and pepper.
  • This salad tastes best when served cold. So put it in the refrigerator for a while.
  • Enjoy it with a glass of wine!
