Spice up this Valentine with Herbed Chicken Steak

Since I have been sharing a series of posts for Valentine’s day, some exciting recipes must be a part of it too. We have suggested in a few posts before that cooking for your Valentine can be one of the best surprises ever. Keep it classy this Valentine’s with light and nutritious food. Start with a yummy soup and then try this Herbed Chicken Steak. Serve it with potato wedges and coleslaw. The pic was clicked sans the wedges. You can also place this interesting DIY card on the dining table to woo your partner.

Chicken Steak

The recipe is quick and easy and if you follow it to the “T” then you can master it even if you don’t know how to boil water.

Ingredients:

  • 2 chicken breasts
  • Juice of 1 lime
  • 3 tbsp mixed herbs
  • 2 tbsp olive oil
  • Salt and pepper to taste

For the potato wedges:

  • 5 potatoes (cut into quarters or cubes)
  • 1 tbsp olive oil
  • Salt and pepper to taste

For the Coleslaw:

  • 2 cups mixed vegetables( thinly sliced capsicum, onion, cabbage, carrots)
  • 2 tbsp Mayonnaise
  • Salt and pepper to taste

    Method:
  • If you have preplanned the meal, then marinating chicken is a great idea.
  • Make tiny slits in the chicken breasts so that they absorb the marinade and herbs well.
  • Rub the lime juice and salt on the chicken breasts and place them in a cool place for 3-4 hours. The more you marinate the breasts the better.
  • Heat a non-stick pan and add some oil to it.
  • Rub the herbs on the chicken breasts so that they form a thick crust. Now place it in the pan.
  • Cook on one side for 7-8 minutes and then turn. Cook the other side till chicken is cooked. You can check this by inserting a fork in the chicken. If it pierces through easily, your chicken is cooked.
  • Serve it in a plate with wedges and coleslaw.

For the potato wedges:

  • Boil the potato cubes in salted water for 5 minutes.
  • Pre-heat oven at 200 degrees C for 20 minutes.
  • Coat the potato cubes with olive oil and place them on top rack for 20 minutes or until crisp.

For the Coleslaw:

  • Mix all the ingredients well and refrigerate for 15 minutes.
