Comfort Food – Macaroni and Cheese

This recipe was lying with me for long. Though I have made this macaroni and cheese twice in the last fortnight, I was lazy in writing a post for it.

Macaroni and Cheese

So after browsing through umpteen options for Macaroni and cheese on the Web, I decided to mix all the recipes and come up with my own version. I do that often. I love veggies in my pasta so I added them to this traditional macaroni and cheese recipe. I also reduced the amount of cheese..So you may want to call it Mac and Veggies instead but it tastes still like the macaroni and cheese.

By the way, this can be a great contribution to potluck dinners as it is easy to cook in large quantities. I have used a few exotic veggies in this recipe but you could use regular veggies too. So here you go:

Mac and Cheese

Ingredients:

  • 250gms Macaroni boiled al dente
  • 1 cup Broccoli
  • 1 cup mushrooms diced
  • 1 cup zucchini diced
  • 1 cup beans and carrots cut in medium sized pieces
  • 1 cup mixed bell peppers diced in cubes
  • ½ cup tomato ketchup
  • ½ cup chilli sauce
  • ½ cup grated processed cheese (I used the Amul Tin cheese)
  • 4-5 garlic pods
  • 2 tbsp olive oil
  • 2 tbsp oregano
  • Salt and pepper for seasoning

Method:

  1. Boil and keep the macaroni aside.
  2. Mix it with the white sauce, processed cheese and oregano. Add salt and pepper as per taste.
  3. In a deep pan, heat olive oil. Add garlic to it.
  4. Add all the chopped veggies and sauté for 2 minutes.
  5. Add ketchup and chilli sauce. Then add salt and pepper as required.
  6. Cook for 3-4 minutes.
  7. Preheat oven at 180C.
  8. Now in a deep oven proof dish, layer half the macaroni.
  9. Top it with the veggies and then layer with remaining macaroni.
  10. Grate some mozzarella on top. Bake it for 25 minutes at 180C.
  11. Serve hot with garlic bread.
